According to the American Heart Association, potassium is essential for the body’s growth and maintenance. Potassium is one of the most important elements in our diet. Research shows that people who consume 4,000 mg. of potassium (or more) per day have a reduced incidence of all degenerative disease with an improvement in general health. There is also a dramatic reduction in the occurrence of hypertension, stroke, obesity, and adult-onset diabetes. Dietary programs that lower cholesterol, improve blood pressure or maintain a healthy weight program share the fact that they all contain high amounts of potassium. The relationship between intra and extra-cellular fluid is influenced by potassium concentration levels, and influences cell membrane polarization. This includes the conduction of neural impulses and muscle contraction, the heart muscle being of primary concern. Occurrences of potassium deficiency may result in people on heart medication, physicians, therefore, recommend patients eat foods high in potassium. Relatively small changes to diet with an increase in potassium can show strong clinical results with increases in fluid concentrations. Foods high in potassium include: fruit: bananas, cantaloupe, grapefruit, oranges, tomatoes, prunes, honeydew, molasses and potatoes vegetables: spinach, carrots, broccoli, beets, asparagus, peas, cauliflower legumes: kidney, lentil, garbanzo, black or pinto beans Whole grains with bran include potassium, as well as lean meat, poultry, wild game, lean and fish. Use caution when bowling foods as much of the potassium will be leached into the water and lost if not used. Soups and stews will serve to maintain potassium concentrations.
